Storage and Handling
Keep frozen at -18°C. Freezer shelf life: 12 months. Defrost: Minimum 20 hours or overnight in the fridge.<>br Shelf life once defrosted: 48 hours.
Preparation Advice
Remove defrosted roast from packaging, pat dry with kitchen paper and allow the meat to come to room temperature for at least 20 minutes before cooking. Place the roast in an ovenproof roasting tin and rub 1/2 tsp salt all over the skin, add a little water to the bottom of the tin and roast in a preheated oven at 160°C / 325°F / Gas 3 for 2½ hours. Remove from the roasting tin and cover loosely with foil, leaving to rest for 10 minutes before serving.
